Simple banana bread recipe that requires only one bowl and no mixer needed!

"Mmmmmm! Outstanding! We had 2 bunches of way overripe bananas that we put to perfect use in this recipe! I coated the pans with shortening and brown sugar and sprinkled a bit on the top of each loaf, along with slivered almonds. What a fantastic dessert bread! Perfect, straightforward recipe. I'll certainly make this again. My whole fam loved it!

3 cupSugar
1 1/2 teaspoonBaking soda
1 1/2 teaspoonSalt
1 teaspoonBaking Powder
1 teaspoonCinnamon
1 teaspoonVanilla
4 largeEgg
2/3 cupWater
1 cupVegetable oil
2 cupsBananas; mashed
1 cupPecan; optional

Easy Banana Bread Preparation

1. Preheat oven to 350 degrees.

2. Combine ingredients in large mixing bowl.

3. Pour batter into 2 prepared bread pans.

4. Bake for 1 hour or until firm and golden brown.

5 Cool on wire rack for at least 15 minutes before turning bread out onto tray.

I made a few adjustments too. I added more bananas and reduced the sugar as recommended. I remember the first time I made this, I followed a recipe that called for creme fraiche so I added some natural yoghurt to the batter. It gives it more fluffiness. The banana taste is so over-powering, I can't make out the coffee I added to the water or the pecans, or the cinnamon. But it all comes together to make the nicest banana bread ever! My batter was way too much so I made 6 extra muffins with the rest. I also used half white flour, white wholemeal flour to make it healthier. It's a sneakily healthy recipe for kids :) I'll post a picture later on.

Moist, flavorful, and easy! This is my go to banana bread recipe. I add walnuts and make sure to use very ripe bananas. Excellent sliced and grilled with butter.
