Put 3 eggs room temp in small bowl, with water. Mix eggs with lifting motion till plenty of air in eggs. pour in preheated saute pan with oil and butter. when butter starts to bubble pan is about hot enough. approx med heat. In pan that is right eggs will climb sides if pan. As soon as eggs start to set , move around with fork. as soon as you can lift edges of omelet lift slightly and let egg run under omelet from a couple of sides. in about a min all egg should have firmed up. At this point you can add any filling you want, put it down center of omelet. at this point slip spatula under one side of omelet and fold one side over other. Cook a couple of min more till done to your satisfaction.
