Trailer Trash Nachos Preparation
Bacon: Cut bacon into 1 inch pieces, fry until crispy, drain on paper towel, dice
Scallions: Rinse, pat dry. Cut green part of scallion, 1/4 inch
Mexican Cheese blend. Any cheese blend will do
Place the chips on a microwave proof plate. Spread them out, add cheese, bacon and scallion. Mircowave until cheese is melted.
Try this with your own home made potato chips too, always to remember to salt and pepper your fresh ones while they are still greasy. If you don't have a mandoline you can just use a potato peeler to shave very thin slices of potato, then deep fry them covered in canola oil for about 5 minuts.
