Combine onion, boullion and garlic in a non-stick saucepan until onion is translucent.
Add remaining ingredients except water and stir to combine; cover & cook over low heat for about 10 minutes, stirring occasionally.
Add water and bring to a boil. reduce heat to medium, cover and cook until vegetables are soft (about 20 minutes).
Remove 1/2 of vegetables and puree. Return to pot and heat.
