the bacon is optional, you can substitue for another coating, original recipe calls for bacon but even using tofu is yummy
1.Preheat the oven to 180c and spray a baking dish with 4 sprays
2.in a bowl combine the breadcrumbs, thyme, salt, pepper, sage, parmesan cheese and chopped bacon bits
3.Skin the chicken and pat dry, dip the chicken into egg white mixture and then coat with breadcrumbs mixture.
4.make foil pockets for the chicken to sit in and place chicken in them , if there is any excess mixture pour this over the chicken whilst its in the foil pocket, coat as much as possible with the mixutre
5.bake for 45 mins or till internal tempreture is correct for poultry 220c
6.serve with steamed veg, mash, oven cooked veg or rice.
