Chicken Tender Panini and Tomato Chutney

A great quick dinner that you can either fix from scratch or whip through the express lane at the grocery store and put together in about 20 minutes

1/2 cupSun-dried tomato spread; (Found in produce dept)
1/2 cupPineapple preserves
2 tbsRed wine vinegar
1 Bakery baguette; or loaf of french bread
4 slicesProvolone cheese
1 poundDeli fried chicken tenders
Butter cooking spray

Chicken Tender Panini and Tomato Chutney Preparation

Preheat 2 sided tabletop grill. Prepare chutney by combining tomato spread, preserves and vinegar in microwave safe bowl. Cover and microwave on high 30 seconds to soften; mix until well blended. Cut bread diagonally into eight 1/2 inch thick slices. Spread chutney on one side of each slice. Layer half of bread slices, chutney side up, with cheese and chicken tenders. Top with remaining bread slices. Gently compress sandwiches for flattening for grilling. Coat grill with cooking spray. Place sandwiches on grill and press lid down firmly. Cook 5-6 minutes, occasionally pressing lid, until crisp and golden. Slice sandwiches in half. Serve with extra chutney for dipping

Notes

I don't have a Panini press so I just use my George Foreman grill but you cook in a pan on the stove, just press down with something heavy like a skillet.

This is fantastic and easy to do. I used Italian bread and did on the George Forman grill. The chutney is fantastic. I didn't have Pineapple preserves so I substituted apricot preserves.

I don't have a Panini press so I just use my George Foreman grill but you cook in a pan on the stove, just press down with something heavy like a skillet.
