I seasoned the vegetable mixture with celery salt while it sauteed with the onion. The key to this recipe is to use a really good cheddar cheese. I think it makes a big difference. Great recipe."

Ingredients

4 cups Squash; sliced
1/2 cup Onion; chopped
35 Buttery round crackers; crushed
1 cup Cheddar cheese; shredded
2 ea Eggs; beaten
3/4 cup milk
1/4 cup Butter; melted
1 teaspoon Salt
Black pepper; to taste
2 tablespoons Butter

Original recipe makes 10 Servings

Preparation

1. Preheat oven to 400 degrees F

2. Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well and place in large bowl.

3. In a medium bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into a 9 x 13 inch baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter.

4. Bake in preheated oven for 25 minutes, or until lightly browned.

Someone made this and I ate some before I realized it was squash, which I hate. Yea, I wish I liked it! It had a pretty color though!

It was very easy to make. Just now served it as a Thanksgiving side dish & it turned out perfect!! I did choose to make it using Smart Balance & Vanilla flavored rice milk to limit the amount of dairy & it still turned out great. I will be making this again, Maybe for Christmas!!

This mas good. I made it last night for dinner. But i added green, onion carrots, cauliflower, and garlic. And I seasoned them in flavored butter. It was the bomb#5stars

My 11 yo loves it and has never liked squash until this. I use half squash and half zucchini and shred a whole block of cheddar cheese. Definitely will make over and over with my garden squash.
