Ready in 50 minutes
Tender squash, gooey cheese, and crunchy crackers make this a memorable side dish or a hearty main course, This is a great dish that can be made with low-fat ingredients and is still just as good!
"This casserole was so delicious. Had company over, and it was the rave. I used a combination of yellow squash and zucchini. I seasoned the vegetable mixture with celery salt while it sauteed with the onion. The key to this recipe is to use a really good cheddar cheese. I think it makes a big difference. Great recipe."- Psalmchild63

KendraCooks 4 months agoSomeone made this and I ate some before I realized it was squash, which I hate. Yea, I wish I liked it! It had a pretty color though!
FastMetabolism 4 months agoIt was very easy to make. Just now served it as a Thanksgiving side dish & it turned out perfect!! I did choose to make it using Smart Balance & Vanilla flavored rice milk to limit the amount of dairy & it still turned out great. I will be making this again, Maybe for Christmas!!

mquattlebaum 9 months agoMy 11 yo loves it and has never liked squash until this. I use half squash and half zucchini and shred a whole block of cheddar cheese. Definitely will make over and over with my garden squash.
