This is a great light tasting Weight Watchers fish recipe at only 2 points per serving.

1 lbHaddock or Flounder Fillets; Fresh Or Frozen
1 tbspButter; or margarine
4 teaspoonLemon juice
1 teaspoonLemon rind; grated
1/8 teaspoonSalt
Pepper
1/8 teaspoonRosemary

Weight Watchers Lemon Baked Fish (2 Points) Preparation

If frozen thaw the fish overnight in the refrigerator. Turn on oven and allow to preheat to

350? F (moderate). While the oven is preheating: Assemble all necessary ingredients to

work area. Grate the lemon rind and place in a bowl. Cut the lemon and squeeze. Measure

4 tsp and place in a bowl. Measure butter, salt, pepper and Rosemary and add to bowl.

Microwave or place in oven until butter is melted. Mix well. Divide the fish into 6 servings

and place in a single layer in a baking dish. Pour the butter seasoning mixture evenly over

the fish. Bake for 25 minutes or until the fish flakes easily.

This turned out great, and I have made it several times. My 5 year old even requested it today for lunch.

Used grocery store commercial frozen haddock so fish was quite watery when done which I think took away from the potential of this dish. The lemon sauce was nice with the rosemary but as fish was terribly watery, it took away from the overall taste. Next time will try with fresh fish from market.
