This turned out to be a nice combination, delicious for a post-workout snack. I'll use less sugar next time.

3 Eggs
1/4 c.Vegetable oil
1 largebanana; mashed
3 tsp.Vanilla
2 c.zucchini; grated
2 c.Sugar
3 c.Whole wheat flour
1 tsp.Salt
1 tsp.Baking soda
3 tspfresh ground cinnamon
2 tspfresh ground nutmeg
1 c.chopped nuts; (optional)
2 ouncesGood quality baking chocolate; melted

Chocolate-zucchini-banana Bread Preparation

Preheat oven to 350?. In one bowl, mix the eggs, cooking oil, mashed banana, vanilla, zucchini, and sugar. Let it set until the sugar has partly dissolved (about 15 minutes). Mix in melted chocolate (chocolate will not dissolve completely, giving the bread a slightly marbled look).

In another bowl, combine the flour, salt, baking soda, cinnamon, nutmeg, and nuts.

Sift the dry ingredients slowly into the wet ingredients. Stir until just mixed and pour into loaf pans coated in baking spray. Bake for approximately one hour. Makes two loaves.

We have tried many zucchini bread recipes. I used this one since I had a few bananas to use. I used Splenda for baking the equivalent of 3/4 cups sugar added 2/3 cup chocolate chips and 1cup walnuts. Good!

I used only 1 cup of sugar, increased banana to 2, zucchini to 3 cup, 3/4 c choc chips and reduced flour to 2 cups because I didn't feel it needed more with the changes. Baked it as a cake. Really good flavor

The recipe says to use cooking oil but does not indicate how much . I felt it came out a bit dry

Excellent. I added a little cocoa powder a bunch chocolate chips instead of melted chocolate and a dash of baking powder, and then doubled the recipe. Great bread!

I used chocolate chips and cut down on the sugar. Definitely my favorite combination for zucchini bread.
