Stir together first 3 ingredients to make crust. Press mixture into bottom of a 10-inch springform pan. Bake at 350 degrees for 8 minutes, cool.
Beat cream cheese, eggs, and 1 cup sugar at medium speed until fluffy. Stir in coconut, milk chocolate chips, 1/2 cup almonds, and vanilla. Pour into pan. Bake at 350 degrees for one hour. Cool on a wire rack. Place semisweet chocolate chips in a zip-top plastic bag. Submerge bag in warm water until morsels melt. Snip a tiny hole in one corner of bag, drizzle chocolate over cheesecake. Garnish with chopped almonds.

JHPieper 3 years agoI loved the flavor of this recipe, I didn't like the chunks of coconut in my cheesecake. I think I will try to put it either on bittom (vefore cream cheese mix) or on the top. Any suggestions? Loved the flavor and got lots of compliments! Thanks for sharing! Still goes to my fav. file.
n2cooking 4 years agoI should have proof read that better. One more time. 4 eight ounce packages of cream cheese, 7 ounces of coconut, & 6 ounces of Milk Chocolate Chips. Sorry about the confusion.

n2cooking 5 years agoIf you like cheesecake you will love this recipe. It is rich and a heavy cheesecake loaded with coconut, chocolate chips and almonds. If you want to try to make the cheesecake healtier you can use light cream cheese for two of the 8 oz. packages. However, it is really not a recipe you want to try to make healthy. After all it is cheesecake! And worth every bite. It does freeze well if you have any left over. [I posted this recipe.]
