Chicken Goulash (chicken Stew)

"I made this with skinless, boneless chicken thighs and added small cubed red potatoes and cut carrots to the mix. Also, I only added about a half cup of cream with the 2 tbsp of flour, and that worked well....still lots of sauce. Final product....fabulous! Will make again."

Ingredients

2 lbs boneless skinless chicken thighs
1 Onion
8 Garlic
2 cups Chicken broth
8 ounces mushrooms
2 tablespoons olive oil
1/2 tablespoon paprika; (up to 1 tbsp)
1 cup cream; (evaported milk works too)
2 tablespoons Flour
salt and pepper

Preparation

chop onions, slice mushrooms and mince garlic.

in stock pot heat olive oil, add onions, garlic and mushrooms, saute until onions are translucent about 5 minute.

cut chicken into bite size chunks.

add chicken, broth,paprika, salt and pepper to pot and simmer low about 45 minute.

in cup mix cream and flour and stir into pot simmer 5 minute more.

serve over pasta, preferably spatzle.

Notes

I used cream of chicken soup instead of broth, canned mushrooms, and leftover cut up chicken and it was very good
