| 1 largecucumber; peeled, seeded and coarsely grated |
| 8 oz.cream cheese; softened |
| 1/2 c.Mayonnaise |
| 1 Tbsp.Fresh Lemon Juice |
| 1 Tbsp.fresh dill |
| 3 smallgreen onions; tops, chopped finely |
| 2 Tbsp.Chives; Chopped |
| Tabasco; sauce |
| garlic salt and pepper |
| bread; thinly sliced |
Cucumber Sandwiches 3 (southern Style) Preparation
Wring out excess cucumber juice in a clean towel. Cream
cheese with mayonnaise and lemon juice. Add cucumber, onion
and seasonings. Use more mayonnaise if needed for spreading
consistency. Spread sandwiches; cover with damp towel.
Refrigerate several hours before serving. Filling can be kept
in refrigerator for several days in airtight container.
