Most low country boils call for seafood, generally shrimp. I don’t care for too much shrimp, so I omitted it in my version.

Original recipe makes 4
Old Bay seasoning; to taste
1 lbnew potatoes
1 lbPolish or smoked sausage; cut into 2 inch pieces
4 earssweet corn; cleaned and sliced into thirds
butter

Easy Low Country Boil Preparation

In a large pot, add potatoes and sausage. Cover by about 4” with water. Add Old Bay seasoning to taste. Heat over high heat, and bring to a boil.

Cover and cook for 15 minutes. Add the corn; cook for another 5-10 minutes.

Drain and serve with additional Old Bay and a dollop or two of butter if desired.
