Great dip for gatherings.

"This was awesome!!!! I didn't have any salsa so I used Rotel tomatoes instead. This meat mixture would also be good in a burrito with lettuce, tomato, & sour cream.. My husband & son gobbled it down with chips. Thanks for posting it!!!" - Shelltone71

Original recipe makes 3
1 poundGround beef
4 tablespoonOnion; chopped
3 tablespoonGreen pepper; chopped
1 12-oz canNacho cheese soup
1/2 cupSalsa
4 tablespoonBlack olives; sliced
4 tablespoonGreen olives; sliced
2 tablespoonGreen chili; chopped
1 teaspoonJalapeno peppers; chopped
1/4 teaspoonOregano
1/4 teaspoonPepper
1/4 cupCheddar cheese; shredded
2 tablespoonSour cream
3 tablespoonParsley; minced
Tortilla chips

Cowboy Beef Dip Preparation

In a large skillet,cook the beef, 3 T onon, 2 T red pepper, 1 T green pepper over medium heat until smeat is no longer pink, drain. Stir in the soup, salsa, 3 T ripe olives, chilies, jalapeno, oregano and pepper. Bring to a boil. Reduce heat, simmer, uncovered for 5 minutes. Transfer to a serving dish. Top with cheese, sour cream and parsley. Sprinkle with remaining onion, peppers and olives. Serve with tortilla chips.
