Stove Top Macaroni and Cheese

Stove Top Macaroni and Cheese

Ready in 45 minutes

A delicious stove top version of macaroni and cheese...convenient, easy and much tastier than anything you could ever get in a box.

"just as easy as making the boxed stuff, except you know what's in it! It tastes even better, too. My kids love it (sans hot sauce) and I use whole wheat pasta and soy cheese. I like it with a tiny bit less pepper and mustard, but otherwise, de-lish!!"

Ingredients

Are you making this?
8 ounces elbow macaroni,; uncooked
4 tablespoons Butter
2 large Eggs
6 ounces Evaporated milk
1/2 teaspoon Louisiana-style hot sauce,; or to taste (I use Frank's or Crystal)
1 teaspoon Kosher salt
1/2 teaspoon freshly ground black pepper,; or to taste
3/4 teaspoon Dry mustard
10 ounces sharp cheddar cheese,; shredded

Original recipe makes 4

Servings

Preparation

Bring a large pot of salted water to the boil. Cook your macaroni in this until just al dente, according to the package directions. Drain well, then return to the pot. Add the butter and toss the macaroni well to coat. In a small bowl, whisk together the eggs, evaporated milk, hot sauce, salt, pepper, and mustard. Stir the egg/milk mixture into the hot pasta, then add the cheese. Reduce the heat to low, and continue to stir and cook until cheese is melted and mixture is creamy. Serve.

Makes 4 to 6 servings.

Notes

For an extra kick, try a combination of aged cheddar and hot pepper Monterey Jack cheese.

This does not make enough for 4-6 servings!! I doubled it for my family if 4. Not a very good recipe in taste either. I would make the following changes to make it taste better... Double recipe No mustard No hot sauce Add 1/2 cup more noodles (for doubled recipe) Use whipping cream instead of evaporated milk

This was so good! I substituted evo milk for 2% and Cheddar for italian blend! My family thought it was better than stoffers! Thanks!

I make this with rigatoni instead of elbow macaroni, and use a Vermont cheddar. This is an amazing and easy recipe. My god daughter and her brother ask for it EVERY time they come over.

We thought this was terrible. It is impossible to mess up Mac and cheese therefore I feel this is a bad recipe and I am easy to please.
