1)Bring first 4 ingredients to a boil. Cover, reduce heat, and simmer 30 to 40 minutes. Remove chicken, reserving broth. Skin, bone, and shred chicken, set aside OR just use precooked chicken strips.
2)Add vegetables, onion, and parsley to pan; cook covered over medium high heat 20 minutes. Add chicken and ramen noodles with seasoning packed; cook 5 minutes, stirring occasionally.
