Original recipe makes 4
2 cupsMacaroni
5 ouncessharp cheddar cheese; grated
3 ouncesraclette cheese; cubed
1/4 cupgrated parmesan cheese
2 tbspflour
1 tspsalt
1 tspdry mustard
1 3/4 cupsheavy cream
3/4 cupsmilk
1 tbspbutter
paprika

Preheat oven to 375

Cook macaroni and drain. Melt butter and add flour, salt,and dry mustard. Add heavy cream and milk and whisk until well blended. Heat until hot but not boiling. Add all three cheeses and stir until melted. Greas a 9 inch pan and add macaroni. Pour cheese sauce over and stir. Sprinkle with paprika and bake for 25 minutes. Broil for a few seconds until top is just golden. ENJOY!!!!

I have used both the swiss and the french raclette cheeses. They are both very good. You can find this in the gourmet cheese section in grocery store or in Whole Foods Markets. [I posted this recipe.]
