Chilled summer soup that will refresh and have you wanting more.

"Just finished making this and it's delicious! Cool and refreshing. I only juiced one lime because it seemed like a lot and I used a whole cucumber. I also put in one diced roma tomato because I had it and thought it was on the ingredient list - LOL! I have the crab for the garnish, but haven't made that part yet. THE SOUP
4 Avocados
1 cloveGarlic
1/2 Cucumber; chopped
2 tbsCilantro; chopped
2 tbsScallion; chopped
2 Limes; juiced
1/2 cupSour cream
1 tbsHoney
2 tbsWhite wine vinegar
6 cupsWater
Salt & pepper; to taste
GARNISH
1/2 poundJumbo lump crab; cleaned
6 Cherry tomatoes; halved
3 tbsExtra Virgin Olive Oil
1 tbsChives; chopped
Salt & pepper; to taste

Avocado Cucumber Soup with Crab Preparation

For the soup:

In a blender, combine all ingredients. Blend on high until completely smooth. Taste for seasoning. If using a small blender, do in two batches. Pour the soup into a storage container and put in the refrigerator for at least one hour. For the best effect, chill the bowls also.

For the garnish:

Pick through the crab meat to remove ALL the shell pieces. Place the crab meat in a mixing bowl with the olive oil, halved cherry tomatoes, and finely chopped chives. Season with salt and pepper

To serve:

Pour the soup into 4 chilled bowls. Spoon the crab salad into the center of each soup. Drizzle some of the leftover oil from the mixing bowl around the salad.

I used about 3 cups water and a small container of whipping cream and extra cucumber couldn't find ripe tomatoes but my husband found wholly Molly avocado and it worked fine. We enjoyed it on this hot day.

I used plain yogurt instead of sour cream and skipped the vinegar. Also used chicken broth instead of water (smaller amount 'cause I like it thick). didn't bother with the crab garnish - yummy enough as is.
