zehnderella ,Ok, second time around and this recipe rocked! The first time was a flop. This time I used a finer hole to grate the zucchini so that it was quite finely grated. I used a tad less salt and a tad less sugar (only because I was making this for my 2-yr old son). I had to add water to recipe just to get the rest of the flour mixture to mix with the zucchini / oil / vanilla. I didn't add much since the recipe stated that the batter should be thick. I placed the batter into mini-cupcake pans. Baked for 14 minutes and they were done and ready to go. I sprinkled powdered sugar (keeping my son in mind) and it was a nice "chocolate muffin" for taking on the run. I plan to freeze a dozen and use them as special treats. Great recipe! phatgrape ,Not to worry, Amarante. No need for food processors or anything electric of any kind. Just shred your zucchini using a standard manual cheese grater. As far as the size of the pieces, it will look sort of like that pre-packaged shredded mozzarella cheese you see in stores. Mix that with your oil, follow the rest of the steps and voila, you've got yourself one of the best (and secretly healthiest) chocolate cakes you'll ever put in your mouth...promise! :-)14y
amarante ,I don't get it. This sounds great but I'm confused about the grated zucchini. How fine does it have to be? Your instructions don't say anything about a food processor and the picture doesn't show the pieces of zucchini. The directions are a little fuzzy for me so I wouldn't attempt this but I would like to so maybe you could clarify.14y
cooking4venus ,This was delicious! Who would have thought!! Zucchini in chocolate cake! It was moist & my kids ate it up! I loved knowing they were eating a veggie in it! :-) I used Cream Cheese icing on it. Can't wait to make it again!14y
