| 1 1/2 tbspolive oil |
| 1 smallyellow onion; sliced thin |
| 2 tspcurry powder |
| 1/2 cupplain yogurt |
| 3/4 cupheavy cream |
| 1/2 tspkosher salt |
| 1/4 tspblack pepper |
| 1 rotisserie chicken; shredded |
| 1 14.5-oz candiced tomatoes; drained (optional) |
| 1/4 cupfresh cilantro leaves; roughly chopped |
| Cooked white rice |
Chicken Curry Preparation
Heat oil over medium/low heat. Add onion and cook for 7 minutes. Sprinkle with curry powder and cook for 1 minute. Add yogurt and cream and simmer gently for 3 minutes. Stir in salt, pepper and tomatoes. Add shredded chicken to pan and toss to coat. Serve over rice, top with cilantro. Serve with flat bread.
