Light and Tasty South Beach Diet Chicken Pasta Salad

"This is a good recipie - but I made a few changes to satisfy my taste buds since I love adding herbs to most recipes. I used 3/4 cup of light mayo (saves on some fat but still tastes great) and added 2T lemon juice. Also added parsley, oregano, and celery seed. For future recipes I would double the chicken. I also used half whole wheat spirals and half bow-ties (which picks up the sauce equally as nice and adds a pretty texture). This recipe will definitely feed more then 4. It's plenty to bring to a big BBQ party."

South Beach Diet Chicken Pasta Salad Preparation

Prepare pasta according to directions. Rinse under cold water and drain. In a

large bowl, combine mayo, evaporated skim milk, mustard, sugar, salt, pepper,

and cumin; mix well. Add chicken, onion, celery, green pepper, and drained

pasta; mix well. Serve immediately.

Very good recipe! I didn't have Dijon mustard so I used regular mustard (half of what the recipe called for) and added a 1/2 TBSP of hot sauce. I only used 1/2 cup of mayo. Will use lite mayo next time. Definitely a keeper!

If I figured everything correctly, the recipe is reduced to about 552 calories by using light mayo instead of the regular. There might be some ways to reduce it further without sacrificing flavor. It made a lot and the serving size could also be reduced.

I make this frequently. I use 2 cans of chicken and make more of the dressing because after sitting, the dressing is absorbed and makes it a little too dry. Love, love, love this salad!

Really nice. I had to use creme fraiche as UK evaporated milk is sweeter. I would add a bit more chicken but that is just personal taste.

Really tasty. However, I used low fat creme fraiche instead of the evaporated milk (our evaporated milk in the UK is too sweet foe a salad) will definitely be doing this again!

This is really good. I used about 4-6 oz of condensed milk, aprox 1/2 cup mayo (whisked until I had the desired consistancy. also added lemon juice, worchestire sauce, dill, parsley, and oregano. Family loved it...even better the 2nd day. Just save some of the dressing to retoss.

I was very hesitate to try the dressing on this salad, it turned out so well. I made everything ahead of time - tossed it together, so easy and flavorful.

I made this a couple days ago and it didn't turn out at all. I used bow-tie pasta instead of spiral shaped pasta. I probably should have used less mayo than it called for. Those things could have contributed to the yuckiness.
