"My tweaks: add a teaspoon of basil, 1 clove of garlic 1/2 hot italian 1/2 sweet italian sausage. I buy dry beans. Beans are so easy to cook and taste so much better than canned. Original recipe makes 6
1 poundItalian Sausage; casing removed
1 cloveGarlic; minced
2 can (14 oz)Beef broth
1 14.5-oz canItalian style stewed tomatoes
1 cupcarrots; sliced
1 14.5-oz canGreat Northern Beans; undrained
2 smallZucchini; cubed
2 cupSpinach; packed, rinsed, torn
1/4 teaspoonBlack pepper
1/4 teaspoonSalt

Italian Sausage Soup Preparation

In a stockpot or Dutch oven, brown sausage with garlic. Stir in broth, tomatoes and carrots, and season with salt and pepper. Reduce heat, cover, and simmer 15 minutes.

Stir in beans with liquid and zucchini. Cover, and simmer another 15 minutes, or until zucchini is tender.

Remove from heat, and add spinach. Replace lid allowing the heat from the soup to cook the spinach leaves. Soup is ready to serve after 5 minutes.

This soup is hearty and delicious!

I found Bob Evans ground Italian Sausage (1 lb package) and I use that instead of the links. Also, I throw in 2 cans of great northern beans, just because I like beans so much.
