Original recipe makes 4
4 tomatoes; peeled, seeded and diced
4 cupstomato juice
14 leavesfresh basil
1 cupheavy whipping cream
1/2 cupButter
1 salt and pepper; to taste

Rich and Creamy Tomato Basil Soup Preparation

1. Place tomatoes and juice in a stock pot over medium heat. Simmer for 30 minutes. Puree the tomato mixture along with the basil leaves, and return the puree to the stock pot.

2. Place the pot over medium heat, and stir in the heavy cream and butter. Season with salt and pepper. Heat, stirring until the butter is melted. Do not boil.

    I made this soup last night for me and my partner, was delicious! just like you would eat in a resturant be making it again!!!!

    I used a 28oz can of whole tomatoes and probably less tomatoe juice. I just filled it up to cover the tomatoes. Other than that it was the same and easier to make. Excellent flavor.

    I made this last night and I must say it was pretty good! I didn't add salt and pepper because I never know how much I really want so I just added janes crazy mixed up salt and that give it a little extra flavor. Overall it was yummy I'm having it tonight with some grilled cheese sandwiches!

    In the Winter I prefer to purchase high grade tomato puree and let the basil sweat in the soup then take out just before serving and serve julienne basil slices for topping.
