Yummy Spinach Casserole

Even if you are not a fan of Spinach (WWPPS), this id good stuff. And easy. Great to make in huge batches and freeze. I bring a bagful of frozen servings to elderly relatives every month and they rave about having to eat their vegetables.

Original recipe makes 8
3 tablespoonButter
3 tablespoonFlour
2 cmilk
1/2 cgrated fresh Parmesan cheese or Romano
1 mediumOnion; finely chopped
2 clovesgarlic; minced
1 tablespoonButter
2 pkgsfrozen, chopped spinach; thawed, squeezed of excess
salt and pepper

Yummy Spinach Casserole Preparation

Combine butter, flour in saucepan. Heat, stirring to make roux. Add milk (use a bit more if needed) and cheese.

In another pan, saute onion and garlic in butter, then add spinach.

Cook 10 minutes or until spinach is hot and onion/garlic translucent.

Add white sauce and mix thoroughly.

Add salt/pepper to taste.
