Original recipe makes 4
2 tablespoonsoil
1 tablespoongarlic; minced
1 smallonion; chopped
1 mediumtomato; chopped
1 lbground beef
3 tablespoonsSoy sauce
1/4 cupraisins
1/2 teaspoonSalt
1/4 teaspoonpepper
1 cupsweet peas; (optional)
1 cuppotatoes; cubed (optional)
3 ripe plantain bananas; sliced and fried in oil
4 Eggs; cooked sunny side up
4 cupsRice; cooked

Arroz a la Cubana Preparation

1. In a pan, heat 3 tablespoons oil and saute garlic until light brown. Add onions and cook until transparent. Add tomatoes and cook for 5 minutes. Stir in ground beef and soy sauce. Add potatoes. Cook until meat is brown. Add raisins, salt and pepper and stir constantly. Add peas and simmer for another 5 minutes.

2. In a large serving platter, arrange cooked rice with meat in the center. Top with fried eggs and surround side of platter with fried bananas.
