sweet potato casserole topped with marshmallows
in a large mixing bowl, stir together the mashed sweet potatoes, eggs, milk, sugar, 3 T. melted butter, orange juice concentrate, salt, and spices until smooth.. Spread mixture into a greased 2-quart rectangular baking dish. (The dish I use is oval.)
In a small bowl, stir together the pecans, brown sugar, flour, and 2 T. melted butter. Sprinkle over the sweet potato mixture.
Bake in 350 degree oven about 30 min. or until nearly heated through. Remove the casserole from the oven and sprinkle w/marshmallows. Return to oven and bake 5-10 minutes more or until marshmallows are lightly browned. Let stand about 5 min. before serving. Makes 12 servings. (I sometimes omit the marshmallows.)
