Grate cheese. Let butter get warm at room temperature for at least 1 hour.
Mix together cheese, butter, flour, and cayenne. (Use just a small amount of cayenne. In fact, I sometimes omit.) Refrigerate dough. Pinch off pieces of dough...just enough to roll around 1/4 - 1/2 date and 1/4 - 1/2 pecan. Will make an oval ball. Refrigerate balls for 30 min. Bake in preheated 375 degree oven for 10 min. until lightly browned.
