These pancakes take a little more effort than regular pancakes, but it is worth it!
"This is a great recipe. The pancakes turned out very light and fluffy! I added some vanilla and nutmeg, and combined 1 cup evaporated milk with 1/2 c. skim milk. (I ended up adding a splash more skim milk to the batter..) I only substituted the evaporated milk because I only had skim and was wary about how it would effect the recipe. Combine dry ingredients. Beat together milk, pumpkin and egg yolks. Mix dry and wet ingredients.
Beat egg whites until stiff. Fold into batter.
Cook in an electric frypan or griddle.
lastingbliss5 3 months agoMy family love these, I was going to make regular pancakes this morning and my kids insisted that I make pumpkin pancakes again! I added vanilla and pumpkin pie spice. Big hit!!

Trtlmay 5 months agoI did half whole wheat flour, half unbleached, added pumpkin pie spice, but forgot the vanilla. The pancakes were dense, but tasted good. The second half I added which chocolate morsels for fun and they were delicious!! My batch made 18 or so 4 inch pancakes. I would make again.

plavsic07 1 year agoI posted a review of this a while ago and I don't know what I did differently, but this time around these were absolutely to die for. The only thing I changed about the recipe was that I added a dash of cloves. My husband was racing about them! Served then with whipped cream.

darlenatrout 1 year agoI used whipped topping on the pancakes & added some pumpkin pie spice. They were still a little bland for my family. I might try adding vanilla & some nutmeg next time.
Erincpeters 1 year agoVery good. Used turban squash leftover from dinner, and put everything in the blender.
