This is an excellent side dish at holiday time, especially for the finicky kids in the group. Since it's a little sweet, they really enjoy it!

Carrot Souffle Preparation
Preheat oven to 350 degrees.
Bring a large pot of lightly salted water to a boil. Add carrots and cook until tender, about 15 minutes. Drain carrots and then place in the bowl of a food processor.
Add melted butter, white sugar, flour, baking powder, vanilla extract, nutmeg, cinnamon, and eggs to the bowl of the food processor. Process until blended smooth and transfer to a 2-quart casserole dish and sprinkle with confectioner's sugar.
Bake for 30 mintues. Serve as a side dish to any main course or use as a filling for pies, tarts or turn-overs.
