Soak rice overnight to soften. Soak mushrooms overnight, changing water once.
The next day, dice lop cheurng, soaked/squeezed mushrooms, and scallions. Cook rice in rice cooker with chicken broth and some of the strained mushroom water. Cook lop cheurng and mushrooms with soy sauce in sauce pan. Add scallions. Mix all ingredients in large pot. Serve warm.
