"Loved this recipe!!! I doubled it and had soo many cupcakes. But not one of them was left to waste!!! I also added some spices to it, like ginger and allspice. Just to give it a little more. Original recipe makes 12
4 Eggs
2 cupsSugar
1 cupcanola oil
2 cupsFlour
2 tspbaking soda
2 tspcinnamon
1/2 tspsalt
2 cupscanned pumpkin
1 tspvanilla
Cream Cheese Icing:
1 8-ozcream cheese
1 stickbutter; softened
1 box 4xsugar
2 tspvanilla

Pumpkin Loaf/Cupcakes with Cream Cheese Icing Preparation

Mix eggs and sugar in large bowl. Add oil and mix. Combine dry ingredients and add to egg mixture. Mix in vanilla and add pumpkin. Pour into a floured loaf pan and make smaller loaf or cupcakes with remaining batter. Bake at 350° for 50-60 minutes or until knife comes out clean.

Icing:

Beat butter and cream cheese until well blended. Slowly add sugar and vanilla.

    The outside of the cupcakes burned while the inside is liquid and dense. Did u mean baking powder instead of soda?

    Great pumpkin loaf. It was easy to make, had a moist, slightly dense texture and plenty of pumpkin flavor spiced with only cinnamon. Next time I may add some cinnamon to the icing as well.

    This recipe is SO good! I used the applesauce sub as well and it turned out great! I had to bake the loaf a little longer than the cupcakes and I couldn't find the box of sugar so I used 2 & 1/2 cups of powdered sugar and it worked great!

    Absolutely wonderful!! Made 1 loaf and the rest into small muffins. I wasn't going to frost them, but decided to anyway. The cream cheese frosting definitely made them taste almost like carrot cake...yummm

    I used a bundt pan and baked for about 55 minutes. The frosting was a little thinner than I'd hoped...I may even make it thinner next time to use it as more of a drizzle. I liked the idea of substituting applesauce in lieu of the oil. Great recipe!
