Mix eggs and sugar in large bowl. Add oil and mix. Combine dry ingredients and add to egg mixture. Mix in vanilla and add pumpkin. Pour into a floured loaf pan and make smaller loaf or cupcakes with remaining batter. Bake at 350° for 50-60 minutes or until knife comes out clean.
Beat butter and cream cheese until well blended. Slowly add sugar and vanilla.

mogriff1 5 months agoThese were really good! I made them into cupcakes. I used 1/2 oil and subbed the other half with applesauce. I baked them for about 23 minutes. It made 24 cupcakes. I topped them with candy pumpkins. I took them to the office Halloween party, they were all eaten!

Declantoo 1 year agoThe outside of the cupcakes burned while the inside is liquid and dense. Did u mean baking powder instead of soda?
