"Loved this recipe!!! I doubled it and had soo many cupcakes. But not one of them was left to waste!!! I also added some spices to it, like ginger and allspice. Just to give it a little more. | 4 Eggs |
| 2 cupsSugar |
| 1 cupcanola oil |
| 2 cupsFlour |
| 2 tspbaking soda |
| 2 tspcinnamon |
| 1/2 tspsalt |
| 2 cupscanned pumpkin |
| 1 tspvanilla |
| Cream Cheese Icing: |
| 1 8-ozcream cheese |
| 1 stickbutter; softened |
| 1 box 4xsugar |
| 2 tspvanilla |
Pumpkin Loaf/Cupcakes with Cream Cheese Icing Preparation
Mix eggs and sugar in large bowl. Add oil and mix. Combine dry ingredients and add to egg mixture. Mix in vanilla and add pumpkin. Pour into a floured loaf pan and make smaller loaf or cupcakes with remaining batter. Bake at 350° for 50-60 minutes or until knife comes out clean.
Icing:
Beat butter and cream cheese until well blended. Slowly add sugar and vanilla.

Delicious! Cupcakes turned out great, baked for 20 minutes! Used a different cream cheese frosting because I wanted it to be fluffy :)
