2 cans kidney beans; drained
900 g tomatoes; ripe skinned
900 g braising steak
4 tbsp vegetable oil
2 Onions; chopped
1 tsp hot chilli powder; or cayenne pepper
1 tbsp paprika
1 tbsp cumin seed
2 tbsp dark muscovado sugar
3 cloves garlic; crushed
600 mls beef; or chicken stock
soured cream or creme fraishe; to serve
fresh coriander; roughly chopped to garnish

1 Cut the meat into 2cm cubes discarding any excess fat. Pat dry on kitchen paper and season with salt and pepper.

2 Heat half the oil in a large heavy-based saucepan until very hot. Fry half the meat for approx. 10 mins. until browned. Drain, put to one side and repeat with remaining meat.

3 Add the onions to the pan with the chilli, paprika, cumin and sugar and fry gently for 10 mins. until deep golden and caramelised.

4 Return meat to the pan with the garlic, chopped tomatoes and stock.

5 Bring to the boil, reduce the heat and simmer, uncovered for 1 and 1/2 hrs adding the kidney beans in the last 30 mins.

6 Serve with spoonfulls of soured cream or creme fraishe and coriander to garnish

This was excellent for my family! I decreased the red pepper to 1/8 tsp for my kids' taste and added a large diced and fried jalapeno pepper. I also highly recommend using dried instead of canned kidney beans to avoid the preservative in all canned beans. Just boil water, dump in a pound or 2 of dried kidney beans, boil 2 minutes then remove from heat and let soak for 1 hour. Insert into recipe as noted above = much much better tasting than canned beans! I also increased the liquids to 1 - 32 oz carton of Swanson natural beef broth and 2 - 28 oz cans of Cento crushed tomatoes (also no preservatives in these) since I had extra beans to go with the 2lbs of beef in this recipe. Very tasty! This will definitely become one of our monthly favorites!!

I added a whole fresh red chilli and a red pepper when I made this and it's really tasty. Going to make this again soon.
