Love this recipe!! Its great that's it's baked and not necessary to pan fry/saute.
I sliced the chicken breasts in half lengthwise ( this will help for even baking time). Then marinaded the chicken breasts in pepper, minced garlic and a bit of coarse salt at least 6 hrs. for best results. In addition I used grated and shredded parmesan (it gave it a nutty taste).
Amazing dish. Substituted regular bread crumbs with Panko Italian bread crumbs for a better crunch. Couple steps that I think this recipe is missing that are important. 1.) Chicken should be thawed 2.) cut breasts into smaller pieces, for the cook time given, they pieces need to be smaller.
Optional 3.) After initial cook time, broil on top rack for 5 min
I read a lot of reviews before trying it and had amazing success! Skipped the olive oil and coated the chicken with mayonnaise instead. Added garlic salt, basil, grated Parmesan, pepper and dried onion to gluten free bread crumbs and it was a hit!
