Apple-Cranberry Dressing

This is a very good and a little different type of dressing. A great recipe for everyone. Can be made vegan with EVOO instead of butter.

Ingredients
| 8 tbspbutter/evoo | |
| 2 loafs sourdough bread | |
| 1 largegranny smith apple | |
| 2 wholeshallots | |
| 2 ribs celery with leaves | |
| 1/2 Cdried apricots | |
| handfulfresh flat-leaf parsley leaves | |
| 1/4 Cdried cranberries | |
| 2 sprigsfresh thyme; (up to 3 sprigs) | |
| 1/2 tspkosher salt | |
| 3 CVeg. broth | |
| 1 reserve pan drippings; or evoo for top |
Apple-Cranberry Dressing Preparation
pre-heat oven to 325, butter the baking pan, cut bread in to pieces, cook on stove top in frying pan till golden and crisp. Let cool. Peel, core, & coarsely chop the apple. Chop the shallots, celery, apricots, & parsley.
Melt 6 tbs butter/evoo in a pot. Add apple, celery, shallots, apricots, cranberries, thyme, & salt. Cook about 5 to 10 mins. Add broth & parsley. Bring to a boil. Remove from heat.
Toss bread with fruit mixture, until evenly moistened.
Loosely pack dressing in to buttered pan. Bake until the top is crusty. About 40 mins.
Drizzle the pan drippings or evoo over the top. Cook until the top is golden and crisp. About 20 more minutes.
Can be put in last hour of cooking the turkey: can add sausage
