These patties or balls are delicious stuffed in a pita with the garlic sauce, cucumber, tomatoes, and lettuce. You can also make small balls instead and serve them as a unique and fabulous appetizer.

Original recipe makes 6
1 Canchickpeas/garbanzo beans drained
3/4 cuponion; Chopped
3/4 tspGround cumin
1/2 tspGarlic powder
1/2 tspParsley flakes
1/2 tspBaking powder
3/4 tspSalt
1/4 tspPepper
1/2 tspcoriander; Ground
1/8 tspTurmeric
1 cupFine dry bread crumbs
2 largeEggs
Cooking oil; for deep-frying
Pita breads
Garlic Sauce:
3/4 cupLight salad dressing; or Mayonnaise
1/4 cupMilk
2 ClovesGarlic; minced
1 tspDried whole oregano
1/4 tspPepper

Falafels Preparation

Run chickpeas and onion through food grinder or food processor. Place in large bowl.

Add next 10 ingredients. Mix well. Shape into 1 inch balls. Leave balls round or flatten into patties.

Lower balls or patties on slotted spoon into hot 375 degree F cooking oil. Cook for about 45 seconds until desired shade of brown. Remove with slotted spoon to dish lined with paper towel.

Cut pitas in half. Stuff 4 balls or flattened patties in each. Makes 44 falafels or enough for 11 pitas.

Garlic Sauce:

Combine ingredients in medium bowl and chill. Serve in pitas with falafels.
