Mexican Hominy Preparation
In a medium skillet, saute bacon 2 to 4 minutes.
Add onion and cook until transparent, about 4 to 5 minutes.
Drain excess fat; stir in tomatoes, salt, and chili powder.
Break up tomatoes with a fork.
Combine the hominy, corn, lima beans, and green chilies in a 9 X 11 inch baking dish.
Stir in the tomato mixture.
Bake, uncovered, 30 to 35 minutes in a preheated 325 degree oven.
Sprinkle cheese over top and return to oven for about 5 minutes.
