This is a delicious summertime dessert that I got from a co-worker. I told him it made my mouth dance! It reminds me of strawberry shortcake, only better. :-)

Original recipe makes 2
1 6-oz packageStrawberry Jello
1 quartFresh strawberries; washed, sliced, and drained
2 cupsWater; cool from the tap
2 cupsSugar
8 tablespoonsCorn starch; level tablespoons
2 Pie crusts
Cool whip topping

Awesome Strawberry Pies Preparation

Bake the pie crusts according to package directions, and let them cool. Distribute the sliced strawberries evenly in each of the crusts, and set aside.

Mix sugar, corn starch, and jello together thoroughly in a medium saucepan. Add water slowly and mix well. Heat to boiling, stirring constantly. Cook about nine minutes, or until mixture thickens to the consistancy of almost a pudding. Let it cool until you can stick your finger in it without burning yourself (these were the directions I got? LOL). Pour the jello mixture over the strawberries and refrigerate until set. Serve each slice with a generous helping of Cool Whip or whipped cream.

    I loved this recipe, it was delicious. Normally i dont like berries, but this i could eat forever. The only minus is that the jello didnt stay hard on mine like the picture, the fresh berries didnt look fresh when mixed with the jello, and the crust got stuck on the form even if i put margarine on the bottom. Any ideas how to prevent these things from happening the next time? Cause there will definately be a next time ;D
