Awesome Strawberry Pies
This is a delicious summertime dessert that I got from a co-worker. I told him it made my mouth dance! It reminds me of strawberry shortcake, only better. :-)

| 1 6-oz packageStrawberry Jello |
| 1 quartFresh strawberries; washed, sliced, and drained |
| 2 cupsWater; cool from the tap |
| 2 cupsSugar |
| 8 tablespoonsCorn starch; level tablespoons |
| 2 Pie crusts |
| Cool whip topping |
Awesome Strawberry Pies Preparation
Bake the pie crusts according to package directions, and let them cool. Distribute the sliced strawberries evenly in each of the crusts, and set aside.
Mix sugar, corn starch, and jello together thoroughly in a medium saucepan. Add water slowly and mix well. Heat to boiling, stirring constantly. Cook about nine minutes, or until mixture thickens to the consistancy of almost a pudding. Let it cool until you can stick your finger in it without burning yourself (these were the directions I got? LOL). Pour the jello mixture over the strawberries and refrigerate until set. Serve each slice with a generous helping of Cool Whip or whipped cream.
