Easy Elegant Meal
"This recipe was pretty good! I combined it with loaded potatoes & a cobb salad. cooked my tenderloins a little longer than suggested to remove some of the pink. And im not sure about the others but if you bring the sauce to a boil for 10 minutes and reduce heat for the remaining time it will thicken. Pretty good quick meal : )"- hairROX

Preheat oven to 450. Melt ½ T butter in heavy large ovenproof skillet over medium high heat. Sprinkle pork with salt and pepper. Sear pork on all sides, about 2 minutes. Place skillet with pork in oven. Roast pork until thermometer registers 155, about 10 minutes.
Meanwhile, melt remaining 1 T butter in heavy medium skillet over medium-high heat. Add onion and rosemary; sauté until onion softens, about 3 minutes. Add broth, cranberry sauce and vinegar and whisk until cranberry sauce melts about 2 minutes.
Transfer pork to work surface. Scrape any juices from large skillet into cranberry mixture. Boil until sauce has reduced enough to coat spoon thickly, about 6 minutes. Season with salt and pepper. Slice pork and serve with sauce.

acldlw 3 weeks agoSo easy yet tastes great and so tender, yes needs more time for the pork, but so fast for such a great roast.
erika_harding_7 5 months agoThis Recipe was very good! The sauce was amazing. If you cook it a little longer it will thicken up! Love it! My boyfriend really enjoyed it!
Jmlehmann11 5 months agoMeh just ok. Took longer than 10 mins. Wasn't a fan of the sauce really but my fiancé linked it
bcoutlaw 9 months agoI agree with another reviewer, it took about 20 min to get to 155 internal temp. I really like the combination of sweet and sour. Served with Jasmine rice. We will definitely have this dish again.
jsnider 9 months agoExcellent! I do find I need to cook it a few minutes longer in the oven, but it always comes out PERFECT!

Arvan43 10 months agoAbsolutely fantastic! My 4 yr and 18 month loved it too. Served it with roasted rosemary sweet potatoes. It made A LOT of sauce for our pork chops (had that on hand not a tenderloin). I have put it in the freezer for the next time. Thank you very much for sharing!!!!M

nvaid 1 year agoWonderful and easy recipe. I substituted mango chutney for the cranberry sauce, and added flour at the end to thicken the reduction. It was perfect. Don't over cook the pork - 10 min for 1 lb is enough.
angelalaw 1 year agoAmazing recipe hubby's favorite. I use 1/4 tspn of dry spice instead of fresh. But boy is it yummy!
