"Absolutely unbelievable! I prefer sweet cornbread, so I used 1/2 a box of Miracle Maize Sweet Corn Bread (the box is 18.5 oz, so figured that would be too much) & this turned out absolutely perfect. It reminds me of that yummy little corn "pilaf" that you get at some Mexican restaurants. I love that stuff, but could never figure out quite how to make it. YUM!!!"- elementsbb

Bernie1225 11 month agoI have made this recipe over 30 times. It's always the first dish gone at a pot luck. I usually make 3 for a party. One regular, one w/ onions and garlic and one with chipotle and green peppers. I can't tell you how many times I'm asked to make it

CookingWithChris 1 year agoMade this for thanksgiving and there were absolutely no left overs even though I made enough for 20 servings and there were only 15 of us. It was a bit mushy when I took it out of the oven, but it was the perfect consistency by dinner. I will definitely be making this again!!

Lynn1775 2 years agoThis was a great addition to my Christmas buffet, everybody liked & there's none left! Real easy. Recipe did not specify what size pan, I made in a deep dish glass pie dish which worked well.
Azawadski 2 years agoLOVE this recipe! Found it about a year ago and I make it at least once every other month. I plan on making this year as part of my Christmas meal as well! So yummy!!
GabiF 2 years agoJust made this and it was really good! I couldn't find corn muffin mix so I substitued with 2/3 cup of flour, 1/2 cup of corn meal, 3 tbsp of sugar and 1 tbsp of baking powder. I cooked it for an hour, until the top was just browned. Very tasty. I'll be making this again.
KatLive 2 years agoMade this tonight. It was very good though a little mushy. Maybe I'll bake a little longer and add in some carmelized onion next time. Thanks for the recipe.
