"Absolutely unbelievable! I prefer sweet cornbread, so I used 1/2 a box of Miracle Maize Sweet Corn Bread (the box is 18.5 oz, so figured that would be too much) & this turned out absolutely perfect. It reminds me of that yummy little corn "pilaf" that you get at some Mexican restaurants. I love that stuff, but could never figure out quite how to make it. YUM!!!"

Ingredients

1 box corn muffin mix
1 can creamed corn
1 can regular corn; (with water)
4 oz sour cream; (1/2 cup)
0.75 stick butter; (softened)

Preparation

-Grease your pan

-Mix together all ingredients until it is smooth in texture

- Bake ~~at; 350 for approximately 45 minutes

I have made this recipe over 30 times. It's always the first dish gone at a pot luck. I usually make 3 for a party. One regular, one w/ onions and garlic and one with chipotle and green peppers. I can't tell you how many times I'm asked to make it

Made this for thanksgiving and there were absolutely no left overs even though I made enough for 20 servings and there were only 15 of us. It was a bit mushy when I took it out of the oven, but it was the perfect consistency by dinner. I will definitely be making this again!!
