| 1 kilogramMussels |
| 3 tablespoonolive oil |
| 1 Onion; chopped |
| 2 clovesGarlic; crushed |
| 2 Red chillies; chopped |
| 2 400-g tinsTomatoes; tinned |
| 2 tablespoonTomato paste |
| 1/2 cupWhite wine |
| salt and pepper; to taste |
| 2 tablespoonParsley; chopped |
| Bread |
Chilli Mussels Preparation
Heat oil and saute onion.
Reduce heat and add garlic and chilli. Cook for 1 minute.
Stir in tomatoes, tomato paste and wine.
Season and simmer, covered, for 10 minutes.
Wash andscrub mussels, discarding any which are open.
Add mussels to pan and cook covered for 5 minues, or until mussels begin to open.
Garnsih with parsely and serve with fresh crusty bread.
