Ready in 45 minutes
A change from plain rice. Try low fat coconut cream or coconut flavoured condensed milk for a low fat version.
Tip: Another recipe with the exact-same name "Coconut Rice" ranks higher.
Wash rice and place in saucepan with water and coconut cream.
Bring to the boil, simmer for 8 minutes.
Remove from heat, stir in coriander and stand covered for 5 minutes.
