Best chicken tortilla casserole

The one I grew up eating in East Texas. Accept no substitutes.

"I really liked this dish. I was trying to replicate one that I had tried a few weeks ago and I think this might have been better. I added a handful of cilantro and a can of Ranch Style beans with jalapeno's. I think both of them were good contributions but I'm sure it would have been wonderful without as well. Thank you for the great recipe."

1 wholechicken; or 4 breasts
16 ozVelveeta cheese
12 corn tortillas
1 canRotel tomatos
1 canCream of mushroom soup
1 canCream of chicken soup
1/4 cuponions; chopped
1 tspcayenne pepper
1 tspSalt

Best chicken tortilla casserole Preparation

Boil the chicken until it falls off the bones. Tear up the tortillas and put enough on the bottom of the caserole dish to just cover the bottom. Shred the chicken into medium sized chunks and put it in the dish. Put the rest of the tortillas on top of that. Cut up the cheese into 1" squares and put on top of the tortillas. Mix the other ingredients in a bowl and pour over top of casserole. Place in preheated oven at 400 degrees for 45 minutes. Let it cool for 15-20 minutes.

I don't usually leave comments or reviews but this one deserves one. I made it exactly like it said and it was delicious! The whole family loved it and will definitely make again.

Delicious. Definitely making again. Used crushed red pepper in place of cayenne. I halved the recipe and had plenty.

This made for a good dinner tonight, but the changes I made didn't work out as well as I'd hoped. We were out of cayenne pepper, so I used red pepper flakes instead. It wound up being too hot for us. Other than that, we enjoyed it and will try it again - either with the cayenne pepper or less red pepper flakes!
