Ingredients

Original recipe makes 4
1 Onion; chopped
2 clovesgarlic; crushed
2 mediumcurry powder
1/2 tspSalt
1 aubergine
175 gramsred lentils; dried split
600 millilitersvegetable stock
100 milliliterslow fat coconut milk
2 tbspcoriander; choped

Red Lentil and aubergine curry (3 points) Preparation

cook onion and garlic until soft, add curry powder. Cook out

Add aubergine, lentils, salt and stock. Simmer for 30 minutes. Stir regularly.

Once lentils are cooked through (tender and mushy) add the coconut milk and coriander. Mix well heat and serve.
