Original recipe makes 4
4 Sun dried tomato halves; dry packed, cut in small pieces
1/2 cupBoiling water
Cooking spray
2 cupsCorn; fresh, frozen or canned
1/2 teaspoonChili powder
2 mediumGreen onions; thinly sliced
1/2 teaspoonLime zest; grated
2 tablespoonLime juice; fresh
2 tablespoonCilantro; fresh
2 teaspoonExtra Virgin Olive Oil
1/4 teaspoonGround cumin
1/4 teaspoonSalt
4 leavesRed leaf lettuce

Broiled Corn and Sun Dried Tomato Salad Preparation

1)Put the tomatoes in a bowl. Pour in the boiling water. Let stand 10 minutes. Drain

2)Line a broiler pan with foil. Spray with cooking spray. Spread the corn in a single layer. Sprinkle with chili powder.

3)Broil for 2 to 3 minutes or until the edges of the corn are golden brown.

4)Let cool for 5 minutes.

5)Stir the corn and green onions into the tomatoes. Stir in the remaining ingredients.

6)Serve on top of the lettuce leaves
