Broiled Corn and Sun Dried Tomato Salad

|4 Sun dried tomato halves; dry packed, cut in small pieces|
|1/2 cupBoiling water|
|2 cupsCorn; fresh, frozen or canned|
|1/2 teaspoonChili powder|
|2 mediumGreen onions; thinly sliced|
|1/2 teaspoonLime zest; grated|
|2 tablespoonLime juice; fresh|
|2 tablespoonCilantro; fresh|
|2 teaspoonExtra Virgin Olive Oil|
|1/4 teaspoonGround cumin|
|4 leavesRed leaf lettuce|
Broiled Corn and Sun Dried Tomato Salad Preparation
1)Put the tomatoes in a bowl. Pour in the boiling water. Let stand 10 minutes. Drain
2)Line a broiler pan with foil. Spray with cooking spray. Spread the corn in a single layer. Sprinkle with chili powder.
3)Broil for 2 to 3 minutes or until the edges of the corn are golden brown.
4)Let cool for 5 minutes.
5)Stir the corn and green onions into the tomatoes. Stir in the remaining ingredients.
6)Serve on top of the lettuce leaves
