This is a super quick middle of the week dinner that is safe (everyone loves it), and full of veggies, so it's *mostly* good for us! :D

Very good and very easy. Used cooked sliced potatoes and green beans instead of mixed vegetables. Also in the crust I added some shredded cheese to the mixture. Will definitely make again.

Love it!!! Also made it with left over turkey from thanks giving. It was delicious! I add potatoes to the mix. And make with a side of corn bread. I have made this twice and both times it was a hit! Had to double the recipe to make 2 casseroles cuz we loved it soo much the 2nd time. Definitely making it a 3rd!

Great recipe. Since I don't like veg all I use a frozen veggie blend with corn, broccoli cauliflower and red peppers.
