Banana Nut Bread
Preheat oven to 350 dgrees
Puree Bananas, Sour Cream, Eggs and Vanilla in one bowl
In seperate bowl sift flour sugar baking soda, baking powder abd salt. Add 10 Tbs butter room temp and mix until incorporated.
Mix the wet mixture in to the dry mixture umtil fully integrated
Fold in Nuts
Butter a 9in Loaf pan and pour mixture into pan. Bang pan on counter top to even out the top of the mixture.
Cook for 1 hour or until top springs back when pressed lightly.
( you can dress this up by soaking a cup of cranberries in spiced rum for a couple of hours, coarsely chop them and add them to the mix)
The biggest key to this is to not over cook it. Over cooking makes this bread dry. Banging the pan on the counter top a few times also gets some of the air bubble out of it to mkae the mix more dense and moist.
