| 1 1/4 cupcomplete buttermilk pancake mix |
| 3/4 cupcornmeal; yellow |
| 1/4 cupoil; (smart balance) |
| 1/4 cuphoney |
| 3/4 cupwater |
| 1 tspbaking powder |
| 1 tbsphoney |
| 1 tbspbutter; (smart balance) melted |
Corn Bread Muffin Preparation
Mix the mix, cornmeal, oil, 1/4 C. honey, water and baking powder, just until combined. Spoon into muffin cup lined pan or a lightly greased silicone muffin cup pan. Bake in a preheated oven 325 for 15 to 20 minutes, mix the melted butter and honey and brush over the muffins and return to the oven for 4 minutes, remove from the pan and liners and eat. Cool if any are left and store in a airtight container.
